The Holiday Mains I’m Making All November
November is my favorite month to host. Between Friendsgiving, a dinner party or two, and Thanksgiving itself, there’s always a reason to set the table and open something nice, and every one of those nights needs a main dish that earns its spot.
This month’s lineup covers every size of table: two very different Thanksgiving turkeys, a rosy beef tenderloin for a crowd, an elegant duck breast for just a few, a showstopping seafood option, and some cozy one-dish dinners for the weeknights in between. Here’s exactly what I’m cooking in November.
↓ The turkey that converted me for good: done in about an hour and a half, with skin that crackles like rotisserie chicken
Juicy Spatchcock Turkey with Crispy Skin and Easy Homemade Gravy
↓ For a smaller crowd (or anyone who’d rather skip the whole bird), this is the one everyone will talk about.
Porchetta-Style Turkey Breast Roulade (Crackling Skin!)
↓ The holiday centerpiece that looks like a splurge and practically cooks itself.
Perfectly Roasted Whole Beef Tenderloin (Foolproof & Elegant)
↓ My pick for an intimate dinner party: crispy skin, rosy meat, and a glossy cherry pan sauce
Juicy Pan-Seared Duck Breasts with Crispy Skin!
↓ The seafood main I make when I want to wow a table, ready in 30 minutes.
Melt-In-Your-Mouth Crab-Stuffed Salmon in 30 Minutes
↓ Sunday-supper elegant, with a pan of buttery beans doing double duty as the side.
Rosemary-Roasted Pork Loin with Butter Beans
↓ Proof that a simple roast chicken can absolutely hold its own at a dinner party.
Roast Tarragon Chicken with Crispy Skin!
↓ Low, slow, and fork-tender, made for chilly nights and a big bottle of red.
Fall-Apart Tender Dutch Oven-Braised Pot Roast
↓ A cozy, make-ahead dinner for the busy nights between holiday gatherings.
Cozy Shepherd’s Pie with Root Veggie Mash
↓ And for the day after Thanksgiving: the best thing to happen to leftover turkey.
Cozy Chicken Pot Pie with Flaky, Buttery Puff Pastry
November cooking is all about gathering, and a main dish you can count on makes everything else feel easy.
